Three Gluten Free and Vegan Meals for Veganuary

So, I haven’t completely been doing Veganuary but I have been trying to eat more vegan meals this month, so if you’ve also been trying to incorporate more vegan food into your diet for the month of January then here are three new gluten and vegan meals that may be of interest to help mix up your menu this month!

Sweet and Sour Rainbow Vegetable Noodles

I’ve mentioned this meal in my easy 10-minute meals blog post but I love these sweet and sour vegetable noodles! They’re so colourful, affordable to make and you can practically throw in any vegetables you’ve got in the fridge!

This is such a simple meal to make by just stir frying whatever veg you want to include, throwing in your rice noodles (or other noodles if you’re not gluten free) and throw in a vegan sweet and sour stir fry sauce and there you have it, it couldn’t be easier to keep on track with Veganuary!

Sweet Potato, Spinach and Chickpea Curry by Gluten Free Alice 

Not only is Alice one of the loveliest people I’ve ever come into contact with through this online world, she is also a pro at creating delicious recipes and her gluten free and vegan Sweet Potato, Spinach and Chickpea Curry is 100% one of my favourites!

It’s pretty easy and inexpensive to make and although it is gluten free, vegan and pretty healthy, its still full of flavour and really filling, especially when served with boiled rice and a free from naan bread – my favourite is the M&S one!

Gluten Free & Vegan Tortilla Pizza 

We all know I love a tortilla wrap pizza and often make gluten free wrap pizzas, so I had a think about how you could mix things up and make this recipe vegan for January!

Ingredients:

Wraps (Warburtons Gluten Free, BFree and Genius Wraps are vegan)

Pizza Sauce (Pizza Express Passata is suitable for vegans)

Dairy Free Cheese (I usually opt for VioLife as it melts well)

Toppings of Your Choice (I personally like sweetcorn, roasted peppers, spinach)

Method:

  1. Put the wrap on a pizza tray and cover with the sauce, cook in the oven for 5 minutes
  2. Add your cheese and toppings and put back in the oven for 5-10 minutes
  3. Drizzle with oil or pesto, add torn basil and serve immediately.

So quick and easy and probably the best tasting gluten free and vegan pizza you’ll get and healthier!
